Hey Paul, Do you recall my dingy from the BEER cruise? Its a Baltik that I bought new off eBay in 2005. Its 7 years old now and not one issue, no leaks, no nothing, good as new. We used it a few weeks ago on a trip to Cape Lockout. I just did a eBay search for "Baltic Boat" and he is still selling them, in case you're looking.
The cheaper Zodiac dinghies (like our Zoom) are still PVC. Defender regularly has the smallest Zoom (which is what we have) for around $500. It is a great little dinghy, the small size fits two adults easily, but it packs away fairly small and weighs around 50lbs. This seemed like a big advantage for a small boat like ours compared to the more normal roughly 10' long and 90lbs inflatables. It also pumps up faster since it is smaller.
On our dinette C-25 it fits into the way back of the quarterberth or under the dinette table (when lowered) for long term storage.
With 3 adults it does get low in the water and someone will probably get a little wet.
For the extra money, get a real zodiac... I got 10 years out of mine before I replaced it. By the time you patch the heck out of it, you could have bought a nice Dink. That slime stuff works too, but only for so long. Sten
