With all the talk about leaking through hulls, and since I don't plan to replace the knot meter, I thought it might be prudent to have the device removed and sealed up with a fiberglass repair.

Any thoughts on this?

Yes, seal the hole and replace the knot meter with a GPS. The fewer holes in the hull the better.

The through hull for the sink drain is located in the same area. When I removed the knot log, I also moved a new sink drain above the water line, and eliminated the 2 holes in the bottom

I found another through hull (hole). I think it is for the toilet intake. now Im looking for anything else that might be a potential leak. Id really like to get this boat water worthy and get her out on the water.
