I get a little water under the sink right under the drawers in the galley so I am installing a bilge pump in that area. I was wondering where most people drill for the thru-hull. I know it needs to be a least 8 inches about the water line. I want it much higher than that just to be safe. Please let me know if anybody has any suggestions.

Water under the sink should drain to the main bilge. Do you know the source of the water?

I have lots of photos documenting my bilge pump install accomplished over this past winter season but have not written up an article to go with them yet.
I put the through-hull adjacent to the one for the manual pump, on the transom, and added a vented loop attached to the transom by short screws. My pump is in the main bilge but if you need one and can fit it off-center under the drawers in the galley, the hose run would be much the same: through a new hole in the aft of the main bilge, then into the space below the quarter berth, up into the transom space, vented loop, through hull.

It would help us answer your question more fully and accurately if you provide some additional details about your Catalina 25, such as the model year, type of keel, and interior layout.

Following on Leon (who didn't do this ), many here have set up a "signature" in their profile with their model, (C-25, C-250, or Capri 25), year, keel (SK, WK or FK for C-25s, WB or WK for 250s), rig (SR or TR), hull #, and sailing venue. Then it appears automatically under each post. Many questions can be answered more accurately knowing these things. Sometimes it even helps explain somebody's answer. There are good examples in two replies above.
