Have the kit from Catalina Direct and the time has come to do it. 1983 boat with original parts. My fear is that the bolts will break. What are the odds of that happening and what do you do. Seem like it could really bring the season to a halt. What are the odds of a hogged out keel to the point that you need a bushing. If you do, can the hole be drilled while boat is on trailer. Finally, what about the I-bolt on the cable. Have many of you had problems with this breaking when you went to remove it. Thanks for any help.

I sweated those keel hinge bolts too... but they came out ok. Make sure your socket is perfectly aligned so you aren't putting the bolt in a bind or contacting the side of the recesses for the bolt heads. I had to do some 'relief work' on the recesses in my keel hinges with a dremel tool to get a socket fitted in properly. Take your time.
Bigger worry was the original keel cable retainer bolt as it was stainless into cast iron. I used PB Blaster with multiple heat/cool cycles to draw the penetrating oil into the threads (heat, spray on, let cool), and then I still sweated it.
As you remove the bolt, go a quarter turn 'out', then tighten back 'in' slightly to let the threads clear rust and debris... do this until it starts to turn easily... otherwise it can bind up tight on the way out. Again, make sure you apply force 'true' to the bolt.

Maybe, by using a Bux (brand of magnetic base) drill. It has an electromagnet base that sucks down tight and holds the drill securely in any position on ferrous materials. It's industrial $trength $tuff, you'd probably have to rent one.
If your going to do the bolts and hinge pin why not replace the cable and it's hardware at the same time. Sure would give you peace of mind for a while. If the bolt snaps off learn how to use an easy out. Google Easy Out . Good luck on the project.
