I've been wanting to do this mod and finally got around to it. We do not use the space under the galley for a cooler so I wanted to make storage shelves. I used angle (1") aluminum for the mounts and 3/4" "Starboard" for the shelves. 1/4" SS bolts are used to mount the brackets and #10 SS screws hold the shelves to the brackets.
We plan to use plastic baskets to store things in and then add a bungee to the front of each shelf to stop the baskets from sliding out.

When we go for cruises we find we need more space so this mod should help. I got the shelves from the same Internet custom cutting board shop that I used to make the cockpit table and helmsman seat. They round the edges and make any size you want.
We cannot direct the winds but we can adjust our sails.
For cruising we use a large "5 day" Igloo cooler that is kept under the cabin table. For day use we have a small cooler that goes behind the cabin steps.
Fiddles would like nice, I agree. I wonder if there is some sort of folding/locking hinge that would allow a fiddle to be up most of the time but down when needed? Also, would the fiddles be teak or the black lexan to match the galley fiddles??

Do you know the size or Igloo model that you're using? Does this fit especially well under the table?
We've been shopping for a cooler to fit under the galley, but we're not very happy with this arrangement. A cooler that fits under the table, forward in the cabin, sounds like a good idea.
The 50 quart IGLOO will fit nicely in the storage area, handles down, or under the table. WM usually has some big sale on these this time of the year. (FATHER'S DAY) Do like your mod though Randy. Will show it to the Boss and who knows.
Ours is the 54 or bigger, I can't find a model on it. Our experience is that the bigger units will "fit" in the spot under the counter but it is awkward to actually use them there due to the lack of height lifting the top and then lifting the whole unit out of there full of ice, etc. Our large Iglooo just slides anywhere you want it under the table. It can be secured to the mast post but we never found that necessary. For us, the need for more storage when cruising is more important. Except for cruising, we use a small easy-to-carry cooler for a few sandwiches and drinks.
We also use a five day cooler which fits in between the table & the settee. We actually have two of them, the first one was too big & didn't fit well so we bought the second. Neither were horribly expensive. We use the blue not-cooler as storage for plates & cook ware, I'm actually not sure what all Rita's got in there, she sort of claimed it for her own. I do like the idea of the shelves, but I'm done doing projects for this "winter". I've got one more thing to rig, and that's the power tiller setup for our new engine. I'm hoping for no rain over the weekend to get it set up.
The one I have is called the "Ultra Cold 50" which probably is what they call the Max Cold now. The dimensions are the same. When we go on a long cruise we also take the 94 Quart Igloo which we store under the table starboard.
The shelving mod is now completed with the addition of some nice woven wood containers and bungee closures. We got the containers from The Container Store and the set of two baskets fits great in the shelf, basically filling the whole shelf area. I sprayed the baskets with three coats of Helmsman varnish.
Then I added small folding padeyes and bungee to keep the containers from slipping out while heeling. Overall adds 4 square feet of storage for food and galley items.
The bungee and neat little hooks (you put them on yourself) are from West Marine.
This mod takes wasted space and makes it useful. The Admiral likes the extra storage and the fact that the woven containers add some natural elements to the cabin.
