So, with these two bits of information, it looks like the towing weight of the boat and trailer ONLY (no outboard, no fuel, no water...) is about 5,400 lbs.
I suspect that the total weight being towed would be about 6,000 lbs, but I would be interested in hearing any "real" numbers that anyone might have.

Yes, GVWR of 7,000 is total weight on the trailer/including the trailer. Your numbers look good, just remember that anything at all you have in the boat that did not come with it from the factory will increase the weight...and, these things always weigh more than we think.
