My swing keel sits level in the water with the keel up. I would definitely check to see what gear is under the v berth. I will say, that I use 6 to 8 gallons of water in jugs to help with balance when I have a person at the bow when moving a docking speed. I push the 6 -8 gallons to the rear under the cockpit. This keeps the motor in the water just enough especially when backing up. When sailing the water jugs are placed at the keel cable spot behind the steps. This extra 50 pounds has worked the trick and does not affect the sailing.
Sounds like an awful lot of work. Maybe a different motor bracket? My bracker only has two settings, up and down, but does reach, although at times barely.
