Going to fair my keel this month. Debating between 2 materials. Does anybody have any experience with West Systems or System Three fairing compounds? Any recommendations or guidance appreciated.

I think you'll do well with either epoxy. I've used WEST System the most, and I'm very impressed with the amount of information on their website. They're also very responsive when you ask questions.
One thing to keep in mind, the thicker your mix is by volume, the faster it's going to "kick". To minimize this, try to use shallow pans to keep the epoxy fairly thin while you're using it, this will give you extra time to work with it. I've had ziplock bags of epoxy kick in my hands, and it's frustrating and hot! The worst configuration is in a ball since it minimizes the surface area to volume ratio which allows heat to build up faster. Since epoxy is exothermic, it starts giving off heat as soon as you mix the catalyst into it. I keep mine in a cool spot and try to work in the morning when it's coolest.
