Almost nobody <u>needs</u> self-tailing or 2-speed winches on a C25. Most people get by fine with single speed, non-ST winches. Those are options that might be useful to you, depending on how you use the boat, and whether the benefit you'll gain is worth the extra cost to you. You can daysail, race, or cruise without them. They can only make things somewhat easier in certain circumstances.
I like Selden's reversable winch--press a button on the handle and it eases the loaded sheet as you crank. If I had a 30+ footer, I'd really want them, for safety as much as for control.
