Had a 25 in San Carlos for a short time and loved the boat.Big interior cockpit good size for happy hour etc New plan is to buy one on a trailer to live on here (Vancouver Island) during the summer and tow it to San Carlos for a few winters until I retire. The big Q is once its set up to my liking can I sail it down wind to Panama??? That outboard scares me &&& anyone out there been offshore in one???
I've sailed in Tampa Bay and the Gulf of Mexico. The outboard will cavitate in swells or large chop even in the bay. If the weather is great, no problem, but if you get any nasty stuff, I think you will wish you had an inboard and heavier ballast.
We found one with an inboard if the outboard is your biggest concern. There is some loss of space with the inboard as the aft berth sleeps one instead of two. The area under the cockpit floor is used for the engine. Also there is a loss of storage in the v-berth with the diesel tank located there. Ours has a fin keel and standard rig which would probably be better for your needs than a swing, wing, or tall rig in my opinion but I am sure there are others. Also came on a trailer.
Sailing to Panama might be expecting a lot from a C-25. It really isn't an off shore boat, and you would likely face some unpleasant conditions in a 5000 mile journey. I strongly believe you should rethink the boat.
