I put in a cockpit table on Outlier over the weekend. I mounted the table forward enough so that it did not interfere with the tiller (even when down) but not so far forward as to interfere with the companion way ingress/egress. It is oval and can be oriented abeam or for-and-aft. Abeam seems to work best, especially when reclining against the bulkhead at the end of the day.
Since the mount went into the often wet cockpit floor and I hope never to remove the mount, I used 3M 5200 for sealant. Extra sealant cleaned up easily with Interlux 216.
The cockpit floor was 1" thick exactly, cored with what seemed like solid wood.
Other good news is that it turns out to be a good place to stick 5 kids at meal time. When they're done, clean up amounts to hosing off the table and cockpit, which is much better than when they eat below decks.
I added a new photo to the Flickr set showing 5 kids at the table.
