Symetrical foils lift when they are placed in a positive angel of attack hence why the little bit of weather helm is so vital to good weathering as it places both the rudder and keel positive to the upwind desired mark.
On the other hand... Asymetrical foils lift if there is laminar flow over there surfaces and lift towards the longer of the two forms. Their lift is controlled by both the speed of the flow as well as attack angle.
The hull form is a foil... and becomes asymetrical when heeled... this is why the crew is sent to leeward in light air to heel the boat. It's why wide beam boats are given to increasing weather helm when heeled excessively as thicker foils generate more lift. That is also why wide beam boats suffer more hunting at anchor.
