The pedestal for the dinette table and the aluminum access plates in the cabin sole are corroded from standing water. Can I use my bench grinder with a brass brush to clean and polish them? I have previously used the brass brush to polish stainless, and I wonder if the brass somehow made the stainless rust quicker and easier.

Not if they're anodized (anodizing is a coating.) You could have these reanodized or remove the anodized coating and paint the bare aluminum to improve the appearance. Either method may not eliminate all of the of the pitting though.
