I just put on my new main sail, full battens, loose foot and was idling out of my marina and raised the sail. Wow, winds at 10 - 15, the damn took off. The GPS peg'd at 7.3k's, I know that a lot of it was due to the outboard, but still wow.

Where are you tied up at Pleasant? The last couple of times I've been to the lake, the winds have been 0-9 max and mostly 1-3. I keep Third S in the dry storage.
I recently put on a new mainsail -- full batten/loose foot/6.5 0z Dacron made by Schurr Sails and could tell a speed/performance difference also. I noticed the new sail is much noisier when flaking or folding to secure after sailing. My old sail was like folding cloth -- very quiet. With this new sail i feel like i am making enough noise to wake up every one in the marina. The full batten is also a little harder to secure on the boom but the extra performance outweighs that issue. Does the snap, crackle, pop noise when securing the sail quiet down after a while ?? Also last Sat. we were able to get some nice sailing in. But your right thats not the norm.
Spent last weekend in Fountain Hills at McDowell Park for daughter's mountain bike race. Winds approaching 20kts on Sunday, all the shade tarps and tents being blown around, C25 1200 miles away....
was supposed to crew on MacGregor 26 (Cavale still winterized) this past sat. the two of us looked out at whitecaps in 25 kts gusting over that (30+ on the lake {Pickwick Lake, TN) and decided we were 'too old for that sh**" worked on my boat and listened to screams over VHF from spinnaker and cruiser classes doing a short triangle just outside visual range.
