After everyone's helpful advice and some research I think I have it straight on replacing the gate valves in my '81 C 25. Now I wonder if anyone can tell me what size thru-hull and sea cocks are needed. The hoses all seem to be 1/2". Do people generaly go with the high priced bronze sea cock? Is it advisable to replace all three thru hulls with a mushroom fitting and a sea cock? Thanks.

I went with the mushroom head for the galley drain and a flush mount for the forward drain because of it's proximity to the trailer pad. I didn't want it to interfere. As far as brass or marelon (sp) either one is strong. I used the brass because the mushroom head had a lower profile and the cost was only $1 more. I think in salt water there may be an advantage for one over. Someone else may have an answer for you there.

If they are currently the old 'volcano' to-hull style, IMHO, yes.
I found that a small angle grinder (4" to 5") makes short work of the volcano(s).
Wear a dust mask and have a shopvac sucking the dust/debris out and it's not too bad. You will need an appropriately sized holesaw to make the new openings for your thru-hulls.
If your in the water 24 / 7 and in a marina with power you may want Marilon through hulls. No common grounding system required. If your on a trailer its your choice. The bronze through hulls have less chance of a fracture if inadvertently placed on a pad of the tailer or bumped when loading. If you use bronze in a marina and one of your neighbors is thoughtless enough to have an automotive type battery charger running or a cord in the water bronze can be a problem . I prefer bronze and a sacraficial zink. Even a cheap clip in fish zink will do fine. Do you need to wire all the through hulls together ? Depends on how bad or old your marina is and if its salt or fresh. Salt being worse . Oh and dont forget those small zinks for the engine too.
For what it's worth the to-hulls on my 1981 (#2428) were 1/2" for the head and 3/4" for the galley and replaced them with same dimensions when changed to thru-hulls.
