I think the main reason I use the winch handle more now is because I'm better at reading the telltales and tend to make many more slight adjustments to the sheets, which is easier with the winch handle.
Truthfully, I really don't tack that much because I usually don't need to. On a typical weekend trip of 40 - 45 nm, I motor out for 5 minutes, then start sailing on the same tack for about 20 nm, then stop for the night. Returning back home the next day on the opposite tack also usually doesn't require any tacks. The only time I tack a lot is on local daysails, going up the coast (upwind) -- it's such a hassle when the continent gets in my way!
