I've got a winch-handle holder and an inclinometer I want to install in my boat. Both should be attached with screws. Any advice on what size screws I should use? I assume I'm after something like a self-tapping sheet metal screw made out of stainless?

The proper screw size will be determined by the part you're mounting. (i.e. Whatever fits in the holes or countersinks provided).
Stainless sheet metal screws are appropriate. Get pan head (machine style) or flat (countersunk) as will fit in the device. Be sure to bed whatever you mount to prevent water penetration.
I just installed an inclinometer, used oval-headed ss screws that just fit the mounting holes and for the winch holder I used ss pan-head screws with ss washers. In both cases I used a sealant.
