I'm looking at a Spinnaker/Gennaker with these dimensions: head to clew at 34 ft., head to tack 35 ½ feet, and 19' foot. C25 is a std rig. I know this doesn't meet the 'published' dimensions for a spinnaker for a C25 but I also don't know why this wouldn't work either...

That sail is probably a bit big. The Head to tack dimension is almost 5 feet bigger than the max luff you can hoist. While the foot dimension would be within normal limits (not class legal but workable) the luff and leach though are way to large. In general that sail is 25% larger than what you would want.
The general rule of thumb for a cruising spinnaker is that the luff can be plus or minus 8-10% of your I dimension (29 feet in our case) However it cannot exceed the max luff - which in our case is around 30.5 feet. The foot should fall between 160 to 180 percent of the J dimension (which equates to 16 3/4 feet through 18 feet and change)
