The idea of a piano hinge that the teak trim piece wood then fold down and out of the way sounds like it could work. Good idea ! I think there are many ways to accomplish an extended bunk. Having it on the starboard side is fine as well. I think it comes down to what your preference as to which side and how to accomplish it. In the past, a number of people of posted photos of how they did it...and each one has some unique feature to consider.
I went sailing today but first, I fitted up my sheets of dense poly-foam (plastazote) on the bunk. I took an addl photo but no time to load right now.
Actually, I probably could make do using the existing cushions on board the boat and just put them on the extended bunk. But my thought is to use a denser foam since my wife thought the existing seat cushion was too soft (and narrow & confining) which resulted in not such a good night's sleep. My extended bunk is a bit lower and so a thicker cushion needed to bring it up flush with the existing cushion height. A 5" cushion should do it. I will probably order that and then see how that comes out and then decide what to do with the existing seat cushion...maybe replace it's foam with denser matl or...I will order another mattress to match up and store the seat cushion when sleeping overnight.
