Tough question... I presume you have a sliding gooseneck, so the height will depend on the hoisted sail after the downhaul is tensioned, and is also affected by the condition of the sail. It can vary 4-6". I'd wait till you have the boat rigged and take some measurements, allowing for your sail cover. However, you can buy it a little on the long side now (figure on the boom being 6' above the cockpit sole) and cut off the bottom of the main bow to fit your exact measurements, which will probably be a little lower than that. (Standard rig, right? The tall rig boom is a foot lower.)

Edit: You also want to make it a little lower based on where the boom "rests" against the topping lift and perhaps a sail stop in the mast slot when the sail is down. I mounted mine on the side-decks just forward of the winch island parts of the coamings--a commonly used spot.

A few things to note. Do you know if you have a standard or tall rig? That will make a significant difference in determining your bimini height. Then you need to decide where you want to mount the bimini legs. I mounted them to the genoa track with custom cars which allows me to slide the bimini forward and backward.

Some people mount them on the combings which are a few inches higher. I bought a bimini from Overtons that is sized 46"H 79"-84"W. I ended up cutting off 5" from each leg to provide another 2-3" of clearance under my boom. You can check out my site for more photos and descriptions. Let me know if you have any questions.

The coamings are the raised parts between the cockpit and the side-decks. The primary winches are on top of them, on what's commonly called the "winch islands"--on a C-25, the wide part of the coamings.
