So we started oiling up our Catalina wood.
Is there any special treatment for the marine plywood panels under the cushions? A few of mine have some water marks from leaky windows I'd like to get rid of. Somebody said don't paint them?

Paint them if you choose, but you will have to remove all the varnish first and use a quality marine paint. Out of the sunlight, varnish holds up well; out of sight, just sanding bad parts and new varnish works fine until you are ready to refinish them. Real varnish takes a little more care to apply and is less durable than polyurethane, but it is a lot easier to remove - pick your poison.

Are you talking about Masonite (like the panels I had on my '85)? If so, the stains are probably permanent unless you paint over them... Why not just put the cushions on them and fuggetaboutit?

I painted all of my marine plywood settees, inside and out. I like the clean look of white paint, and I prefer that all surfaces be treated or coated in something... Prevents absortion of moisture and therefore odour. I don't want my boat to smell like a boat or an RV, I want it to smell completely neutral. Stain and then some kind of sealant such as varithane or else paint with a high quality paint. I used a ceiling paint that can be used in bathrooms and wet places - as it forms a seal and will not let moisture penetrate. My paint job is four years old and looks like new.
