I've wanted a cockpit table since I bought Windsong, but they're so expensive I've preferred to spend my money on fun things like sails and electronics. Last month I made a discovery - the quarterberth hatchboard is the perfect size for a cockpit table. So I bought a bracket from Edson for the pedestal and installed a flange fitting on the hatchboard and made a leg that stores under the hatchboard. It works great, takes less than a minute to set up and is sturdy. It's not sexy, but I'm very happy with it, especially the price: about $100, $80 of which is the cost of the edson bracket). I used galvanized steel for the leg. PVC probably would work, too. Here are some pics. TABLE

Nice idea, especially since your hatchboard has laminate. Mine is bare brown wood (masonite?) on the outer surface, so would be less suitable for that use.
For $140 (free shipping) I opted for this, and it has worked out very well for us. It pops up and down in seconds:
SnapIt's products are not inexpensive, but are very nicely designed and impeccably machined. It looks like you have one of their drink holders on your binnacle. I opted for this one because the center section will accommodate small items like cell phones, car keys, and sunscreen tubes:
Paul, maybe I'm using the wrong word. Under the quarterberth just aft of the stairs there is a shallow storage area that is accessible via the board I have pictured. I just re-purposed that board.
Paul, not the bilge cover. Our boats must be different. Under the quarterberth mattress I have a shallow locker under a hatchboard. I'm guessing that you don't have that. :)
No, it's not a feature on the 2005 C250WB Pity, that's where I have my AC water pump, it would be a beast to get access to it. I mounted it on a sledge that is secured by angle edged starboard that is glued with 5200 and a wedge. Would have been nice to have that area though!
