I purchased my Cat 25 in August 2013. I had it winterized last winter just to make sure that it was done correctly. It was a bit expensive. What is the best way to un winterize the boat? It has a head and 2 sinks.

Was it shrink wrapped? Some folks can remove the shrink wrap without ruining it to re-use next winter. If the boat has a fresh water tank and working sinks (pump handles and drains work) then you probably have red non-toxic antifreeze "non-tox" in the tank and hoses. You can pump it all out using the pump handles and store it in empty gallon milk containers until next winter. Once you've drained all the red stuff out, add a few gallons of new fresh water and pump that all out - you don't have to save that - its non-tox. But check with your boatyard for disposal.
If you have a fixed head and holding tank, chances are there's non-tox in there too. Again, pump out the red stuff, save it for next year (or not). Flush out with fresh water. I'd pump fresh water through into the holding tank, then get a pumpout from your pumpout facility or pumpout boat.
If your house battery was taken out for the winter, check the cells to see if you need to add any distilled water (not Poland Spring) to cover the plates, then fully charge the battery before putting it back in the boat. If it holds a charge for a few days at 12.6V then it should be good to go.
For your outboard engine, check it for cooling water flow (don't start it unless its in water - a big bucket will do), take off the air filter and run some carb cleaner through the carb while running, change the oil if you had not done so last fall and check your bottom unit oil. It should not be white, wet or frothy. If it is, change it.
Clean the hull, repaint bottom paint, clean the topsides and cabintop. There are lots of fiberglass cleaners and your nonskid may appreciate the Starbrite stuff with TPFE.
