When I installed coaming winches, I added rub bars on the cockpit corners to keep sheets off the deck. They left me with two problems.
Ocassional overides and an even worse loading angle if using Twings to solve the problem of the short lead tracks that came with early hull numbers. The winch handle has minimum height below the life line so there isn't room to tilt the winches.
The solution was to marry Bryan's use of stanchion blocks and the rub rails I was using. I dropped the blocks as low on the stanchions as the mounts would allow and the angle is now parallel to the coaming and 90 degrees to the winches.
The swivel cam near the jib sheet is for cleating the twing.
I made them... I had collected some plastic pieces over the years and turned one in the lathe and then sawed in half. Would be nice to find some stainless materiel...
