another follow up. Turning the motor in the direction of desired travel does work and has solved the problem of getting the boat to turn to starboard when backing out of the slip and the wind is over the stern. You can see from the photo the linkage for the motor controls that I was speaking about.
hand steering the motor helps get the beast moving in the right direction. Thanks to all for the advice.
