On a boat our size I don't feel that self-tailing is worth the extra cost unless you do a lot of single-handing. I know Winchers aren't everyone's cup of tea, but they work OK for me.<img src=icon_smile_big.gif border=0 align=middle>
I don't know the extra cost of self-tailers, but if it were a $100 each I'd say it is worth it. Are we talking about for the jib sheets? I don't have self tailers for the halyards but I'm okay with that 'cause I don't use those winches (on the cabin top) that often. The (self tailers) that are mounted on my coamings for the jib sheets are wonderful. They are not two speed. They are Lewmar, and I don't know the model. But they work great. Get self tailers for your sheets, you'll like them.
Lewmar 16ST on my 85. Only one speed, but plenty for our size boat. The ST(self tailing) feature is really nice. Would highly recommend it. Allows you to grind with one hand and steer with the other.

Many of the winch manufacturers use similar numbers for similar sized and function winches.
Halyard winches - single speed, size 6 or 7
Primary jib sheet single speed only, size 8 is probably best
Primary jib sheet two-speed, Harken makes a nice size 16 that fits on the coaming. Next size up is 30 size and will work well too.
Primary jib sheet self-tailing single-speed, size 16 is most popular. But, Lewmar has started producing a size 14 that is nearly the same dimensions as the 16 except that the drum height is about an inch shorter than the 16 and the cost for the 14 is $110 or more less per winch.
Prices?? (within ~$25 or so per winch, new) 6's = ~$115; 7's = ~$165; 8's = ~$200; Harken 16 two-speed = `$400; 14 Self-tailers = ~$400; 16 Self-tailers = ~$500. And if you went to a size 30 self-tailing two-speed you'd be looking at about $800 per winch.
