Cruisenews had a couple interesting links in their "New Discoveries" section today... worth a look if you're interested in setting up a self-steering rig on your boat.
Some time ago, I tried a rudimentary sheet-to-tiller self steering system based on a design I found on the internet, but I couldn't seem to dial it in so it would, relatively speaking, self-steer the boat.
The difficulty I had was not really with wind or sail trim, but with wave action on the hull. It seemed that I couldn't compensate for the pitching and yawing of the hull caused by going up, over, down, and through the waves.
