On the rudder there are pintles/gudgeons? I am not sure which is which.

On what would look like the "male" ...pintle? there is a hole. I have inserted a ring to eliminate it from disconnecting from the gudgeon? Is that the right thing to do?

Usually a cotter pin is inserted to keep the rudder from jumping off/out of the gudgeon. I put a washer on first then the cotter pin.

I use a heavy stainless hitchpin in the pintle. Easier to mess with with than a ring... and stronger.

I agree with Bruce, a hitch pin is much easier to work with in this situation.

what exactly is a hitch pin. Like you use on a truck hitch?

Also known as 'hair pins'... looks like an old fashioned bobby pin on steroids
