After the great debate I ended up with a 30A fuse on each battery for the house load and an 80A fuse for the starter. I expect that I could have gone lower for the house fuses but I couldn't find the terminal fuses in anything smaller than 30A. It'll do. Thanks so much everyone for the advice!
